Long John Silver's Copycat Battered Chicken

I used to LOVE going to Long John Silver's for their fish because I LOVED the batter.  I haven't been in many years, but last week I saw a copycat recipe for the batter and decided to give it a try. I am so glad I did.  This tastes just like Long John Silver's!!  I read the reviews before trying it and made some changes according to other reviews. Here's the recipe.

1 lb. chicken or fish
3/4 cup plain flour
2 TBS cornstarch
1/4 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1 tsp. Old Bay Seasoning
1 tsp. sugar
1/4 tsp. paprika
1/4 tsp. onion powder
1/4 tsp. garlic powder
3/4 cup water

Combine all the dry ingredients in a bowl.  Add the water and stir until combined.
Heat oil to 360-375.
Make sure meat is patted dry. If not, the batter won't stick.
Dip meat in batter and dry until golden brown.
