Chocolate Chip Baked Oatmeal

    I know that oatmeal is healthy for you, but I do not like mushy oatmeal, so I just don't eat it. I have tried a couple of baked oatmeal recipes, but they were either dry or tasteless.  Then I found this recipe.  I gave it one more try and I'm so glad I did. My hubby doesn't like mushy oatmeal either, so when he asked for seconds, I knew this was a keeper!!  This oatmeal is moist and flavorful. It's just perfect.  The only thing I changed, is that I used all Old Fashioned Oatmeal.  She says to use 1/4 to 1/2 cup chocolate chips. I used 1/2 cup and it's perfect, but use less if you desire.

3 cups old fashioned oatmeal
 1 c. brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 c. milk
½ c. butter melted
2 eggs, beaten
 ½ c. semi-sweet chocolate chips

1.  In a mixing bowl, combine all ingredients.
2.  Spoon into a greased 9 inch baking dish  (or any similar sized baking dish).
3.  Bake at 350 degrees for 30-35 minutes or until edges are lightly browned and center is set.

I used a 7x11 baking dish and it was done perfectly in 30 minutes.
