Pecan Pie Bars


Because I have some pecan pie lovers in my house, I decided to try this recipe. It comes from a Taste of Home magazine. Most that ate them, said they liked them better than pecan pie. My hubby still likes pie better, but he loved these bars, especially with a little scoop of vanilla ice cream on top!  The recipe makes 2 large 15x10 pans. I just halved the recipe.

6 cups all purpose flour
1-1/2 cups sugar
1 tsp. salt
2 cups butter (no Substitutes)

Filling:
8 eggs
3 cups sugar
3 cups corn syrup
1/2 cup butter, melted
3 tsp. vanilla extract
5 cups chopped pecans

Combine the flour, sugar and salt. Cut in butter until crumbly.
Press onto the bottom of two greased 15x10 inch pans. Bake at 350 for 18-22 minutes or until crust edges are beginning to brown and bottom is set.

For Filling:
Combine the eggs, sugar, corn syrup, butter and vanilla. Mix well. Stir in pecans. Pour over crust. Bake for 25-30 minutes or until edges are firm and center is set.
