Cheesy Bacon Hash Brown Pie
This is a really good dish for breakfast!! The blend is perfect and I changed nothing about the recipe at all. Served with eggs, it makes the perfect breakfast. Well, my family thinks the addition of biscuits makes it perfect! This is also just as good reheated. I got the recipe from here.
4 slices bacon, cooked
1/2 cup onion, diced
1/3 cup milk
1/2 tsp. salt
1/4 tsp. pepper
3 cups frozen hash browns, thawed
1-1/2 cups sharp cheddar cheese
Preheat oven to 375.
In a 9 inch cast iron skillet, cook the bacon until crisp.
Remove from pan and add onion. Cook until clear.
In a large bowl, whisk together the eggs, milk, salt and pepper.
Stir in the hash browns, cheese, bacon and onion.
Make sure the cast iron pan is well greased.
Dump the mixture into the pan and spread evenly.
Bake until edges are crispy, about 30-35 minutes.
