Spinach Quiche


I love this spinach quiche, whether for breakfast or supper. I make this once a month for my husband's breakfast to take to work. It is just as good reheated as it is fresh.  This is not my picture, but it looks just like this. This picture comes from here and she adds mushrooms and different cheese. There are so many different ways you can make a quiche.

1 pie crust
8 slices bacon
4 oz diced onion
6 large eggs
1 cup spinach, diced
1 cup milk
1/4 tsp. salt
1/8 tsp red pepper & black pepper
1 cup Swiss cheese
1 cup Sharp Cheddar Cheese

Preheat oven to 400.
Prick holes in pie crust and bake 7 minutes.
Reduce heat to 350.
Cook bacon until crisp and crumble.
With remaining grease cook onions until clear. Drain.
Mix the eggs, spinach, milk, onions, salt, peppers and half the cheeses and pour into pie crust.
Sprinkle the top of quiche with the rest of remaining cheeses.
Bake for 40 minutes.
Let stand 10 minutes before serving.
