Two in my family like cornbread stuffing, but the rest of us like it made with bread. So I have been searching and searching for a good cornbread dressing recipe. I found this one in an old cookbook and the ones in my family who like cornbread dressing, said it was perfect just as it was. So here it is:
1 large egg
2 c self rising cornmeal mix
1-1/4 to 1-1/2 c buttermilk
1/4 c oil
2 TBS sugar
Mix all together and pour into an 8 inch skillet. Bake at 425 for 25 minutes.
6 slices bread
5-1/2 c chicken broth
3 TBS butter
2 medium onions
4 stalks of celery
1/2 lb. cooked, mild sausage
1/2 tsp. pepper
2 eggs, slightly beaten
When the cornbread is cooled enough to handle, mix it with 6 slices of bread in a large bowl. Crumble it all up. Add the broth and let it set at least 10 minutes.
Dice up the onion and celery.
Melt the butter in a large skillet and add the onion and celery. Let it cook 10 minutes or until tender.
Add the sausage and cook until no longer pink. Drain.
Add to the bread /cornbread mixture. Add the pepper and eggs.
Pour into a greased 9x13 baking dish and bake at 350 for one hour or until lightly browned.
